You don't hear about people using knives in self-defense much, because while it does happen, it's really hard to convince someone who has never seen a stabbing that it actually might be necessary to shank a guy a couple dozen times to get him to stop attacking you. The DA, who I will guarantee you has never had to stab anyone, just doesn't buy it when your lawyer tells him 33 stabs wounds were done in self-defense, even though that was exactly the case.
Most people who have actually had to use a knife in self-defense, ended up getting prosecuted for it. Women have a much better chance of making a self-defense defense work with the courts than a man will.

You're invoking Sorites Paradox, wisely so.
I gather that's how the legal defense for the policemen that beat Rodney King half to death escaped conviction. Which specific club blow crossed the line?

Potentially lethal injuries that aren't immediately incapacitating might raise doubts in the layman's mind.
A capable MD should be able to put doubts to rest.

However, though blade weapons can be formidable, it's difficult to quibble with .45 ACP hollow points.

My father gave me a new one a few weeks ago (Damascus steel?). It's nice looking, but I don't really use knives much. I'm more apt to go with lead at velocity.

However... I don't discount the value of knives

Having a sharp and dexterous blade can substantially expedite field-dressing a big game carcass.
Switchblades (and nunchaku) are illegal in New York State.
Lever open folding knives are not. I've got one of them on my desk. I use it as a letter opener.

In this video, the knife man is the attacker, but you can see how even after delivering multiple fatal stabs, the guy he attacked was still able to take him down (slick judo sweep BTW) and basically beat the shit out of him before he collapsed and died.
Getting stabbed in the right spot will kill you dead as Tupac, but it won't stop the attack right away.... most people don't even realize they have been stabbed for a few minutes.

I took the following image w/ 16 megapixel Nikon. The host slashed it back quite a bit.



On the left is a Wusthof paring knife, $55.oo worth. Nice fit & finish, ATK's first choice.

The wood-handle pare knife to the right of that, "Pioneer Woman" the ideal knife name to solidify my fragile male identity.

The wood-handled knife at the bottom is an el cheapo I paid $2.99 for over 30 years ago. It's very useful while camping and at cook outs.

The two in the middle are folding utility knives. I bought the lower one on a whim, had never seen a folding utility knife with wood inlay. Nice fit & finish, and a bargain at $10.oo

The round thing is a silver dollar, with a Jefferson nickel resting on top.

The L shape is my letter opener.

And the thing at upper right is a container / dispenser of replacement utility knife blades. There's 100 of them in there, and I think that thing cost $10.oo

Knives are useful. Use the right tool for the right job.

Well, Bulwer Lytton said the pen is mightier.

BUT !!

It hurts less.

While at a military hospital a dude showed me a blade he said was used on cadavers.

He picked up the blade, and sliced a paperback book in half with it.


Beware!

Even a box-cutter can kill.

That's a nice looking piece. But do you actually used it much?

After I saw Stallone's First Blood I bought a knock-off of that knife. It rattled around in the back of a drawer for 30 years. I eventually gave it to a friend / knife collector.

What I've found is, for hunting, even a leather sheath is a potential drawback. If I'm going deer hunting I take a wood handled paring knife, make a simple cardboard sheath for it (takes about 50 seconds). No corrugated cardboard. A little adhesive tape holds it together. Just make sure the sheath is a little longer than the blade, so the knife tip doesn't puncture you or your gear.
Field-dressing big game is usually done without benefit of soap and water. So the knife is going back into the sheath gooey. I don't sweat it. A folding knife can take hours to clean after gutting a deer. But a simple paring knife can be made kitchen ready in a few minutes.
The cardboard sheath gets disgusting, but it's disposable. It can even be used as kindling at a campfire.

If the cops who beat Rodney King were actually in fear for their lives to the degree that it justified the beating they gave him, they would have been justified in shooting him dead.
