Interesting article. Mrs PNWest and I haven't had fried chicken in probably close to a decade. There used to be a Popeye's place not far from our house in Houston. I agree with this article. There's a KFC up here but probably not a Popeye's within 500 miles. Too bad for my belly but good for my cholesterol.
Popeye's is great.

These places fry in vegetable oil now, not animal fat. Eating foods fried in vegetable oil isn't bad for your cholesterol...

Between my office and home here in the Houston area,there is a Popeye's strategically located about halfway. It's rare to go a month without a box of chicken and biscuits for a lunch or dinner.

Lard is apparently making a comeback in the culinary world -- it never died out where I'm from. I heard Julia Child say one time that she thought the lo-fat, lo-sugar foods were the source of the obesity epidemic -- that because they lacked ingredients that truly satisfy one's hunger, they caused people to eat more.

I don't know if she's right on that or not. I'm fat, and wish I wasn't, but apparently I was meant to live through long periods of famine -- and although my body would support that, I've never found the personal practice of famine to be at all amusing.

I like Popeye's red beans and rice, too.

Brussels Sprouts, boiled or roasted - yucky
Brussels Sprouts, chopped, sauteed w/ bacon grease (+ garlic & lemon zest) - yummy

See, animal fat is good for you!
